Not recipe per se but...last nights dinner:
Gnocchi with Alfredo Sauce Salad with 1000 Island dressing California Blend veggies Croissants
I was looking at recipes for making Gnocchi from scratch. Doesn't look too hard. I may have to try that. Also, the Alfredo sauce didn't work for me. Need to make it with Gorgonzola but thought I would experiment.
Lunch today was prosciutto and provolone on garlic flat bread. OMG, that is a good sandwich! Can you tell I miss Sicily?
Tonight we are having chicken and Fettuccine Alfredo. I have sauce left over, lol!
Tomorrow...steak!

Wow it's been a while since anyone has posted here so I thought I should post something!
Hamburger Soup!
2 lbs hamburger or ground turkey 1 large yellow onion cut in chunks 32 oz chicken, beef or vegetable stock 1 small bag mixed frozen veggies 1 large can tomato sauce 1 can diced tomatoes with or without diced green chilies 1 clove garlic chopped and pressed garlic powder, thyme, and other prefered seasonings to taste
Brown the hamburger in a large cook pot added your seasonings. Once the hamburger is cook added the other ingrediants and cook for atleast an hour. Let cool the place in the refridgerator over night and reheat for dinner after the flavors have had time to blend.
Enjoy.
Note: You can make this in bulk and freeze for future meals up to 3 months.
Sidenote: Eeeps! Look at all the TYPOS! ack... I'm too lazy to fix them...

LindianThis is my twist on Indian food. I am still experimenting with spices but I find that this combo is quiet tasty! Serving Size: 4 Prep: 15 Minutes Cook time: 1 hour (give or take how long you want to simmer your sauce) Sauce: 1 lb chicken 1 large can of Crushed or Diced tomatoes (you can use fresh tomatoes but this will alter the flavor of the sauce making it a bit more acidic) 1/2 onion (red or white) 2 cloves garlic (you can substitute garlic salt or powder) 1 tbl spoon Ghee (Indian clarified butter) OR a tbl spoon olive oil (also you can experiment w/ this, I bet peanut oil would be pretty tasty) Turmeric: To taste Cinnamon: To taste Cardamom: to taste (this is a VERY strong spice start out with a little sprinkle and the cinnamon really compliments this spice, if you add to much try adding a touch more cinnamon) Cumin: to taste 1 tbl spoon Curry Paste (optional) Crushed Red Pepper: To taste and optional if you don't like spicy Saute the chicken, onion, and garlic. Season while sauteing. When the chicken is fully cooked add crushed tomatoes. Simmer for 30 - 40 minutes. (You can let this simmer longer) For extra kick there is a great chili lime sauce you can find at most markets. Rice:1 cup Basmati Rice 1 3/4 cups water 1 tbl spoon butter or a little bit of ghee (optional) 3 - 5 cloves Cumin seeds OR 1 cup Basmati Rice 1 3/4 cups water 1 tbl spoon butter or a little bit of ghee (optional) peas A few threads of saffron Boil the rice w/ spices, simmer for approx 20 minutes. Serve sauce over rice. It is paired nicely with Naan, which I have been able to find pre-made in the frozen section of the local Whole Foods.

Alright I've been doing a lot of experimental cooking since I've been on my own and I haven't update you all with any recipes! So I'll add one that I came up with recently and it's turned out delicious! It's really simple too, not to many ingredients and very little prep time. Don't make this without fresh ingredients! Bruschetta Serving Size: 2 (You can obviously increase servings very easily and I'll include how later on, but these days I'm only cooking for one!) This is an appetizer not a main course, although I've had it on it's own as a light meal. Ingredients: 3 Roma tomatoes: diced 3 fresh Basil leaves: chopped 1 - 2 cloves of garlic: chopped Olive Oil (approx: 2 TBL spoon) Balsamic Vinegar (approx: 1 TBL spoon) Salt and Pepper: to taste (I use fresh ground sea salt and fresh cracked black pepper, with this you can use regular table salt and pepper but you do get a better flavor with the freshly ground stuff) 3 - 5 slices of ciabatta bread (you can substitute this with most other kinds fresh bread) Freshly grated Romano or Parmesan cheese Directions:In a bowl mix together the tomatoes, basil, garlic, oil & vinager, and the salt & pepper. Let sit for approx 30 minutes. Toast the bread in the oven for about 5 minutes, just enough to get it warmed up and slightly crisped. Top the bread with the Bruschetta and a little bit of cheese. Serve and enjoy! Tips: - If you are serving this later in the day you can cover and let it marinate in the refrigerator. But this dish isn't good left over because the flavors become too strong and the tomatoes get soft. Do not put it on the bread until it's served. - You can substitute Romano or Parmesan cheese with diced baby mozzarella. If you use this fresh soft cheese include it in the tomato mixture so it can absorb the flavors. This is a very mild cheese that absorbs flavor really well. - To increase servings just pair one roma tomato to one basil leaf. The other ingredients can be adjusted by taste.
