So I was cooking tonight and I had this idea...lets share recipes! I love cooking, as many of you already know, so I will post some of my favorite recipes I "cooked up" (giggles). Now I have no measurements it is all to taste, so have fun cooking and please share! Stuffed Chicken Yumm: Pre-heat oven to 375 ° Chicken Breast- butterflied or you can fold the breast in half cheese stuffing marinara sauce pasta Cheese stuffing: 1 pkg ricotta cheese mozzarella 1 egg Italian seasoning salt pepper garlic salt or powder Mix all ingredients together and set aside while cooking marinara. The cheese mixture should have the aroma of spices. Marinara: ummm basic tomato sauce, you can use a can or make your own. I usually spice up canned sauce. Depending on my mood I will maybe add some wine and fresh veggies. Now once you have both of the made you will take a glass baking dish and coat the bottom with a thin layer of marinara. Place the chicken breast on top of the sauce. If folding over the breast place about 2 table spoons of cheese mixture and fold the breast over. If butterflying stuff the pouch before placing in the baking dish. Cover the stuffed chicken with some marinara. This should leave you with about half your marina left over and some cheese mixture leftover as well. Combine the reaming cheese into the remaining sauce. Bake the chicken for 45 minutes allowing the remaining sauce simmer and stir the sauce every 5 - 10 minutes. In the last 10 - 15 minutes of baking time take the chicken out and cover with mozzarella and allow it to brown. Also boil some water and cook your pasta per directions. Place pasta on a plate with chicken on top and cover with remaining sauce. Your ready to sit back and enjoy...Stuffed Chicken Yumm! I will post more recipes later. This was longer then I thought it would be.

Okay I have time for another recipe! Here is an appetizer and a healthy side dish that also taste great!
Crab and Cream Cheese Stuffed mushrooms:
Preheat oven to 375°
1 pkg imitation crab OR 8 0z fresh cooked crab shredded. 1 pkg cream cheese garlic salt (to taste) fresh diced garlic (2 cloves) salt and pepper (to taste) Worcestershire sauce (about 2 to 3 shakes) Italian bread crumbs (optional) 1 pkg mushroom caps (I recommend baby portabella)
combine cream cheese, crab, garlic, seasoning, and Worcestershire. Mix together until all spices and crab are mixed evenly. Stuff the mushroom caps with the cheese and crab mixture. Sprinkle the mushrooms with Italian bread crumbs.
Cook at 375° for 12 - 15 minutes (cooking time can be adjusted to your preference all ingredients are cooked)
Zucchini and Tomato side dish:
2 zucchini 5-10 cherry tomatoes halved (you can use any type of fresh tomato) 1 teaspoon (ish) Balsamic Vinegar 2 tablespoons olive oil 3 cloves garlic thinly sliced salt and pepper Parmesan or Romano cheese (optional)
Slice the zucchini thinly and dice the tomatoes. Mix all ingredients and let marinate for 30 minutes. Saute on medium to medium high heat for 10 minutes. Top with light cheese before serving.

Fried Apple Pies 3 cored and chopped granny smith apples (make sure to peel D:) mixed with a cup of sugar and some cinnamon refridgerated. Make dough out of a half cup of crisco and 2 cups flour slowly added, after that add a cup of milk slowly or until sticky and moist but not wet. Put flour on a big board and and flour ur hands then press the dough on the table some then break it in half and roll half out. Then take a small-ish saucer and make 3 circles and set the rest of the dough not used aside, repeat using the other half. Now you have 6 circles and take the refridgerated apples and set a row of apples in the middle, and flip the side over and press together with a fork. Take a pan and put some butter/crisco in it and on medium heat fry the pies Then after nom them.

Ok Dofus is not being my friend and letting me play, so here's a recipe for rocket pesto (also known as roquette and some other name that I cannot recall).
It's quite a peppery tasting leaf, so it may not be to everyone's tastes. Also this dish contains raw garlic so if you're not a fan this recipe probably isn't for you.
I tend to make large amounts of this and freeze several portions for later, but I'll give measurements for 2 or 3 serves.
1 bunch of rocket (maybe 120g) 1/3 cup of pine nuts 1/3 cup of grated parmesan cheese 1 clove of crushed garlic 2 tablespoons of olive oil
You'll need a pan for the pine nuts, and also a food processor of some description, unless you want to spend a lot of time cutting and grinding.
1. Lightly dry toast your pine nuts over a low heat 2. Stuff the rocket, pine nuts, cheese, and garlic into the food processor/bowl/whatever you're using 3. Blend the ingredients until smooth, adding olive oil to moisten as necessary.
Rocket pesto! Cook some pasta, add and eat. Put some more cheese on top, 'cos cheese is good.
The amounts can be altered however you want for taste. Personally I use more garlic and pine nuts as I like a little more bite (as long as I don't have to talk to or be in the same room as anyone for 48 hours afterwards).

Rocket is a favourite of aussies and brits. My recipe with it is shallow fry some chopped up garlic in about an 1/8 of a cup (~30 ml) of olive oil. Mix with cooked pasta and toasted pine nuts, mix in rocket. There you have it easy cheap and tasty. Oh and I suggest the smaller leaf rocket, the broad leaf stuff is a bit too strong for this, but if you like it use it but give it a rough chop.

Sams Stuffed Chicken
4 large chicken breast 1 head of broccoli, washed. 6-8 ounces of cheese, preferably Velveta, cubed. 4 slices of ham, chopped. Kosher or sea salt Pepper wax paper or aluminium foil
Pre-heat oven to 450
Take the broccoli flower and cut them into bite size pieces then that the stems and peel the tough outside off. cut into small bite sized pieces as well. Sprinkle with salt and pepper lighly. Mix with the cubed cheese and diced ham. Cut a 4 inch slice into each chicken breast cutting almost all the way though creating a pocket. Place as much stuffing as you can into the breast without it spilling over. Line your baking dish with wax paper or foil, place the chicken in the dish and bake uncovered 30-45 minutes until done. Time depends on the size of the breast.
Remove from oven, let sit 5 minutes, then serve either sliced or whole.

Just gonna grill some salmon and put it on a bed of fresh garden greens and top it with a roasted pepper vinaigrette. Does that count as a recipe?
